How to Make a Microwave Egg Salad Sandwich

Step 1: Prepare the Eggs in a Microwave-Safe Bowl 
  • Crack the eggs into a microwave-safe bowl. Make sure to break the yolks completely to prevent them from exploding in the microwave. 
  • Microwave on 700W for about 1 minute. If you prefer firmer eggs, mix them again and microwave for another minute.
Step 2: Mash the Eggs 
  • Use a fork to mash the eggs until they have a smooth texture.
Step 3: Add Flavor 
  • Mix in mayonnaise (5 tablespoons), mustard (1 tablespoon), allulose (1 tablespoon), a pinch of salt, and a little black pepper. 
  • If you don't have allulose, you can substitute it with honey or sugar.
Step 4: Assemble the Sandwich 
  • Prepare 4 slices of bread and spread the egg salad mixture evenly on top. 
  • This recipe makes two Egg Salad Sandwiches. 
  • Let the sandwiches cool slightly before eating for the best texture and flavor.

Ingredients:

  • 4 slices of bread 
  • 3 eggs 
  • Mayonnaise 
  • Mustard 
  • Allulose 
  • Salt
  • Pepper

Instructions:

Step 1 Beat 3 eggs in a microwave-safe container and microwave for 2 minutes.

Step 2 Mash the cooked eggs with a fork or another mashing tool.

Step 3 Add 5 tablespoons of mayo, 1 tablespoon of mustard, 1 tablespoon of oligosaccharide, a pinch of salt, and a pinch of pepper. Mix well.

Step 4 Take 2 slices of bread and spread the egg salad on one slice before topping with another. (Tastes even better when slightly cooled!)
