This recipe was born out of curiosity when I was searching for a quick and easy snack at home. I found rice paper and enoki mushrooms in my pantry and thought, "What if I fry these? Wouldn't they taste amazing?" Spoiler alert: They absolutely do! 

But what truly elevates this dish is the homemade chipotle sauce. While enoki mushrooms, imitation crab, and rice paper create the perfect texture and taste, the chipotle sauce adds a smoky, tangy, and slightly spicy kick that takes these rolls to the next level. 

So today, I am sharing this easy and delicious recipe with you. Let's get started!

Ingredients for Crispy Imitation Crab & Enoki Rolls

Essential Ingredients
  • Rice paper 
    • It's best to use slightly thicker rice paper for a crispier texture. If you have thin rice paper, you can double it up to prevent tearing. Even with thicker rice paper, using two layers will give you an extra crunch, so feel free to experiment! 
  • Enoki mushrooms 
    • These mushrooms are the star of the show, providing an addictive crunchy texture. Be sure to cook them thoroughly, as raw enoki mushrooms can contain toxins. A handful of enoki mushrooms will be enough for this recipe. 
  • Imitation crab (crab sticks or surimi) 
    • Imitation crab adds a slightly sweet and savory seafood flavor to the rolls. If you don't have imitation crab, you can substitute it with fish cake, ham, or any other protein of your choice. 
For the Chipotle Sauce
  • Mayonnaise - A creamy base for the sauce. 
  • Mustard - Adds a tangy and slightly spicy depth of flavor. 
  • Sriracha - For a hint of heat. 
  • Allulose - A healthier alternative to sugar that balances the flavors.

How to Make Crispy Imitation Crab & Enoki Rolls

Step-by-Step Instructions: 
1. Prepare the enoki mushrooms and imitation crab 
Cut the enoki mushrooms to the same length as the imitation crab sticks for even cooking. 

2. Assemble the rolls 
Take a portion of enoki mushrooms and place an imitation crab stick on top. 
Fold the sides of the rice paper to cover the filling, then roll it tightly like a spring roll. 

3. Apply oil for crispiness 
Brush the outside of the rolls generously with oil. This step ensures the rolls become crispy when cooked. 

4. Cook the rolls 
Place the rolls in an air fryer and cook at 180°C (356°F) for 20 minutes, or until golden brown and crispy. 

5. Make the chipotle sauce 
Mix 1 tablespoon each of mayonnaise, mustard, sriracha, and allulose in a small bowl. 
Stir well until smooth and creamy. 

6. Serve and enjoy!

Tips for Making the Best Imitation Crab & Enoki Rolls 

  • Double up the rice paper for extra crunch and to prevent tearing.

  • Store them in an airtight container in the refrigerator for up to 2 days. To reheat, use an air fryer or oven at 180°C (356°F) for a few minutes to regain crispiness.
