Today, we're making a low-sugar version of candied walnuts! 

Candied walnuts are a delicious snack made by coating walnuts in a crispy layer of caramelized sugar. They have a perfect balance of sweetness and nuttiness, making them absolutely irresistible.

In Korea, walnuts are commonly eaten during Chuseok (Korean Thanksgiving) and Jeongwol Daeboreum, a traditional holiday that falls on the first full moon after the Lunar New Year. On this day, people eat various nuts, five-grain rice, and seasoned vegetables as part of a ritual to wish for good health and good fortune in the coming year. 

While walnuts are a staple of this holiday, kids don't always enjoy eating them plain. But when made into candied walnuts, they transform into a crunchy, sweet treat that both kids and adults will love! 

Now, let's dive into the recipe!

  • walnuts
    • The more walnuts you prepare, the larger the batch you can make. For the best texture, choose slightly larger walnut halves rather than smaller pieces, as they are easier to eat. It's also ideal to use walnuts that have had their inner skins removed. Since raw walnuts can have a bitter taste and contain impurities, it's recommended to blanch them before use.
  • Low-sugar Coating
    • Traditionally, candied walnuts are made with sugar, but to keep the sugar content low, we'll use allulose and stevia instead. While these sugar alternatives help reduce the overall sweetness, they won't harden as much as regular sugar, meaning you won't get the same crisp texture. If you prefer a classic crunchy coating, you can use a sugar syrup by combining sugar and water, similar to how tanghulu (candied fruit) is made.

Ingredients:

  • 400g (about 14 oz) walnuts
  • 80ml (about ⅓ cup) allulose
  • 40ml (about 3 tbsp) stevia
  • A pinch of salt

Instructions:

Step 1. Blanch the Walnuts

- Boil the walnuts in hot water for 2 minutes.

- Rinse with cold water and pat them dry.

Step 2. Roast the Walnuts

- Preheat your air fryer to 150°C (300°F).

- Roast the walnuts for 20 minutes.

Step 3. Coat with Syrup

- In a pan over low heat, melt the allulose, stevia, and salt.

- Once fully dissolved, add the walnuts and stir until evenly coated.

- Remove from heat immediately.

Step 4. Optional Second Roasting

- For extra crispiness, air-fry again at 150°C (300°F) for 10 minutes.*(You can skip this step if preferred.)*

Step 5.Cool and Enjoy

- Let the candied walnuts cool in the fridge or a cool place for 1-2 hours before serving.

Notes:

  • Be careful when working with heat to avoid burns. 
  • Stir the syrup frequently to prevent burning. 
  • The hot syrup can be extremely hot, so handle it with caution. 
  • Let the candied walnuts sit for one to two days for the best texture. 
  • Consume within about two weeks for optimal freshness, but for the best quality, eat them sooner. Store in the refrigerator.
