Ingredients:

  • Leftover chicken
  • 2 packs of instant rice (150g)
  • Seasoned seaweed flakes
  • Kimchi
  • A bit of sesame oil
  • A bit of allulose
  • A bit of soy sauce
  • 3 slices of pickled radish
  • 1 slice of ham
  • 1 egg(All ingredients are optional, so feel free to use what you have!)

Instructions:

Step 1: Prepare the Leftover Chicken
Reheat the leftover chicken in the microwave for about 1-2 minutes. If necessary, remove bones and chop the chicken into small, bite-sized pieces. If your chicken is not flavored, mix it with a bit of ketchup or mustard to enhance its taste.

Step 2: Prepare the Kimchi Mixture
Finely chop the kimchi and mix it with 1 teaspoon of soy sauce, a little sesame oil, and a bit of allulose (or a small pinch of sugar). Stir-fry the kimchi mixture over low heat for 1-2 minutes to bring out a deep umami flavor.

Step 3: Cook the Ham and Egg
Slice the ham and pan-fry it over low heat until it's slightly crispy. Fry the egg to your preferred doneness-whether it's fully cooked or a little runny in the center.

Step 4: Prepare the Rice
Heat the two packs of instant rice in the microwave as per the instructions. In a bowl, mix the rice with seasoned seaweed flakes to add a savory, umami-rich flavor.

Step 5: Assemble the Rice Burger

  • Use a small round container or bowl to shape the rice burger.
  • Start by adding a layer of rice at the bottom.
  • Place the cooked kimchi mixture on top, followed by the pickled radish slices, fried egg, ham, and seasoned leftover chicken.
  • Cover with another layer of rice and press it down firmly to hold everything together.
Step 6: Enjoy Your Leftover Chicken Rice Burger!
Carefully remove the rice burger from the mold, wrap it in parchment paper, and take a bite into your flavorful Leftover Chicken Rice Burger!

Notes:

  • Be cautious when using knives and heat to avoid cuts and burns.
  • If you don't have all the seasonings, you can simply mix the kimchi with a tiny bit of sugar for a balanced taste.
  • Meal Prep Idea: Make multiple Leftover Chicken Rice Burgers in advance and store them in the freezer. When you're ready to eat, simply microwave them for a quick and satisfying meal!
