Crispy Fish Cake & Cheese Bites!
In Korea, fish cakes (eomuk) are a staple ingredient that you'll often find
left over in the fridge. Not only are they affordable, but they're also
widely used in many home-cooked dishes, making them a go-to ingredient for
everyday meals.
Why Is Busan Famous for Fish Cakes?
Fish cakes originated from Japanese oden, but they became popular in Korea
during the Japanese colonial era. Since Busan was the closest city to Japan,
it was one of the first places where Japanese food culture took root.
Additionally, being a coastal city, Busan had easy access to fresh seafood,
which contributed to its reputation as the birthplace of Korea's best fish
cakes.
Fish cakes are made by grinding fish into a paste, mixing it with
vegetables, and deep-frying it to create a chewy, flavorful texture.
Component
- Fish Cake
- A must-have ingredient! I recommend using square fish cakes for this recipe. If you don't have square fish cakes, any type will work as long as there's enough space to add cheese inside.
- Cheese
- Sliced cheese works best, but if you don't have it, mozzarella or pizza cheese will also do the trick.
- Pasta Noodles
- Uncooked pasta helps hold the fish cakes together while adding a slight crunch. If you don't have pasta, you can simply cook the fish cakes without it.
Crispy Fish Cake & Cheese Bites

A quick and crispy Korean snack made with fish cakes and melted
cheese, perfect for pairing with drinks!
Ingredients:
- 2 sheets of fish cake
- 2 slices of cheese
- 2 strands of uncooked pasta
- Sauce (ketchup or mustard)
Instructions:
Step 1 - Lay one fish cake sheet flat and place two slices of cheese on top, adjusting them to fit.
Step 2 - Cover with another fish cake sheet and secure the edges using two strands of uncooked pasta.
Step 3 - Air-fry at 180°C (350°F) for 3 minutes, and it's ready to serve!
Notes:
✅ Be gentle when inserting the pasta noodles, as they can break
easily.
✅ For best results, air-fry for 2 minutes first, then flip and cook
for another minute.
✅ If your fish cakes seem dry, brush them with a bit of oil before
air-frying.
✅ Be careful not to overcook, as they can burn quickly! Also, watch
out for hot cheese when eating.
✅ While ketchup and mustard are great options, feel free to use any
sauce you like!
