I opened my freezer and found a lot of roasted sweet potatoes left. 
I needed to use them up, but eating them as they were didn't seem appealing because of their dry texture. So, I decided to cook something with them instead. After some thought, I came up with the idea of making a sweet potato cake using the microwave. 
With just eggs, milk, and a bit of allulose, I figured I could make a delicious cake. So, I gave it a try!

  • Sweet potatoes
    • Sweet potatoes are the key ingredient in this recipe. I recommend using naturally sweet ones, but if they lack sweetness, you can add a sugar alcohol like allulose to enhance the flavor. Make sure your sweet potatoes are fully cooked-if using raw sweet potatoes, slice them thinly and microwave them in a heatproof container for about 8 to 10 minutes until they are soft.
  • Eggs
    • Eggs help bind the sweet potatoes together, giving the cake structure. They prevent the mixture from becoming too crumbly while also adding moisture and enhancing the overall flavor. Be sure to mix the eggs well with the sweet potatoes for a smooth texture.
  • Milk
    • Milk plays a crucial role in making the sweet potato cake soft and moist. When microwaving, a mixture of just sweet potatoes and eggs can turn out dry, but adding milk ensures the cake remains tender and easy to eat. Ingredients:

  • 3 small sweet potatoes (about the size of two finger joints) 
  • 50ml milk 
  • 2 eggs 
  • Butter or cooking oil 
  • Allulose (optional)

Instructions:

Step 1 Microwave the sweet potatoes for about 3 minutes to warm them up. (If they are already warm, you can skip this step.) 

Step 2  Mash the softened sweet potatoes thoroughly. 

Step 3 Add 2 eggs and 50ml of milk to the mashed sweet potatoes. Mix well until you achieve a slightly thick consistency. 

Step 4 If you prefer a sweeter taste, add allulose to taste. (Sweet potatoes are naturally sweet, but if they aren't sweet enough, a little allulose can enhance the flavor.) 

Step 5 Grease a microwave-safe container with butter or cooking oil to prevent the cake from sticking. 

Step 6 Pour the mixture into the container, cover with plastic wrap, and microwave for about 5 minutes. 

Step 7 Insert a chopstick into the cake; if it comes out clean, the cake is done. Note: Let the cake cool at room temperature for about 1 hour for a firmer texture.
